This week has been a beauty and I hope you are all getting outside to enjoy it!

Since you will be burning so many calories doing yard work, I thought I would share some quick and easy recipes that would be fun for the kids to make!
Don’t forget the sunscreen!

Applesauce breakfast cake
Ingredients:
1 cup unsweetened applesauce
1/4 cup molasses
1/4 cup honey
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1 1/2 cups pancake mix
2 teaspoons vegetable oil

Instructions:
Preheat oven to 350º F.
Mix liquids thoroughly.
Add the dry mix.
Stir gently.
Pour into a well-oiled square cake pan.
Bake for 20 minutes or until done.
Serve warm with butter and syrup or with a dollop of flavored yogurt.

Monkey bread
Ingredients:
3 cans of refrigerated biscuits
3/4 cup granulated sugar
1 tablespoon cinnamon
3/4 cup brown sugar
1 stick butter

Instructions:
Cut each biscuit in fourths.
Mix together cinnamon and sugar in a medium size bowl.
Roll each biscuit in the cinnamon sugar mixture.
Place in well-oiled bundt pan.
In a saucepan, melt the butter and add the sugar.
Stir until melted, and gently bring mixture to a boil.
Pour mixture over biscuits and bake for 35 minutes.
Remove from heat.
Cool for a minute.
Turn bundt pan upside down onto a plate and serve immediately!

Fruit smoothies
Fruit smoothies are a fun way to create a delicious and refreshing drink.
You can experiment by adding your favorite fruit, and also incorporating yogurt to the mix!
The basic recipe is:
2 bananas
10-12 frozen strawberries
1-cup apple juice
Place ingredients in blender and process on medium for one minute or until blended.
Enjoy!
